올해는 다른 해에 비하여 떡국을 많이 먹었네요. 어머니가 방앗간에서 갓 빼온 떡을 조금 식혔다가 참기름 발라서 여러 용도로, 떡국 용도, 떡대 용도, 간식 용도 등등등, 상을 펴놓고 써시던 기억은 얼마 안되는 제 어릴적 기억의 참 소중한 부분입니다. 방앗간에 가기 전부터 시작되는 명절 준비는 참 번거롭지만 쌀을 물에 담그고 적당히 불리고 소코리에 담아서 물을 빼고 보자기에 싸고 택시를 부르고... 방앗간에 어쩌다가 엄마를 따라가서 우리 떡이 나오기를 기다리는 동안 옆의 할머니들이 뚝뚝 떼어 주시던 김이 모락모락 나는 힌떡은 참이나 맛이 있었지요. 이곳에서 사는 동안 우리 아이들이나 손주들이나 해볼수 없는 기억들인데 그런 기회가 있었으면 참 좋겠지만요. 이 떡이 나오기까지의 수고로움을 설명하면 아이들은 호랑이 담배 피우던 시절의 이야기인 것처럼 신기하게 생각하는 시대가 되었습니다.
내가 받은 우리쌀 떡국떡이 그런 과정을 거쳐서 정성스럽게 나온 떡이라 믿고 먹고 있습니다. 얼렸다가 물에 담그어서 씻은 다음에 끓여도 퍼지지 않고 쫀득쫀득한 감이 살아 있어서 좋습니다. 제가 아는 어떤 분은 푹 퍼진 떡국을 선호하시고 어떤 분은 씹히는 맛이 있어야 한다고 하시는데 저도 후자에 속하고 푹 퍼진 떡국은 좀 그런데 이 떡은 끓여도 푹 퍼지지 않아서 다행입니다.꼭 명절때만 먹는 것은 아니지만 신정과 설날은 떡국을 먹지 않으면 좀 섭섭하고 떡국을 좋아하는 아이들과 손으로 빚은 만두를 넣어서 맛있게 먹고 다음을 또 기약해 봅니다. 만두개 새우살을 좀 넣었더니 감칠맛이 국물에 배어서 더 맛있더군요.
This year, I ate more tteokguk than usual. My mother used to cool the rice cakes she had just taken out of the mill, spread sesame oil on them, and use them for various purposes, such as tteokguk, tteok sticks, and snacks, and that is a very precious part of my childhood memories. The holiday preparations that start before going to the mill are really troublesome, but I soaked the rice in water, soaked it properly, put it in a sokori, drained the water, wrapped it in a cloth, and called a taxi... I sometimes followed my mother to the mill, and while waiting for our rice cakes to come out, the steaming tingling tingling tingling tingling tingling tingling tingling tasted really good. These are memories that my children and grandchildren will never be able to make while living here, so I wish they had that opportunity. When I explain the hardships that go into making these rice cakes, the children think it is a story from the days when tigers smoked cigarettes.
I believe that the rice cake soup I received was made with such care and I eat it. It doesn't get soggy even after freezing it, soaking it in water, washing it, and boiling it, and it still has a chewy texture, which is good. Some people I know prefer rice cake soup that is soft and fluffy, and some say it needs to have a chewy texture. I belong to the latter group, and I don't like fluffy rice cake soup, but fortunately, this rice cake doesn't get soggy even after boiling it. It's not something we eat only on holidays, but I feel a little sad if I don't eat rice cake soup on New Year's Day and Lunar New Year's Day, so I eat it with my kids who love rice cake soup and make Dumplings by hand, and we'll make plans to eat it again next time. I put some shrimp in the Dumplings, and the savory flavor seeped into the soup, making it even more delicious.
