● 72 Hours of Devotion — The Crafting Process

  1. Delicate Kneading – The dough is gently mixed to preserve its flaky layers, avoiding gluten formation.

  2. Double Frying – The first fry at low temperature creates layers; the second at higher heat adds color and crispness.

  3. Oil Removal – Each piece is placed on paper towels and flipped throughout the day to drain excess oil completely.

  4. Soaking in Syrup (Cheong) – The yakgwa is coated with syrup all day, allowing it to absorb sweetness evenly to the core.

  5. Draining Syrup – To prevent the yakgwa from becoming overly sweet, the syrup is carefully drained over the course of a full day.
